The Recipes!!


Joshua and Brittany came over last Sunday. She had emailed us on Saturday evening what she was bringing for Sunday Dinner. I did not get that email until Sunday morning. My dear sweet Michael had asked me to make some ziti. So, I made a crock pot version of it. Then I saw Brittany's email that said she was bringing a baked pasta dish.... :) So, we had a pasta buffet. I made a big salad and we had rolls. Strawberries had been on sale at Krogers. We bought 2 quarts and they needed to be used. This pie was a good way to use them. I even had some left over. The recipe that follows is my version of the actual recipe. Brittany made a single crust pie dough. I made the inside part.

Fresh Strawberry Pie

4 cups of strawberries, cut into slices
1 box (3 oz.) vanilla pudding (the cooking kind)
1 1/2 cups of water
1 tsp. of lemon juice

1 box (3 oz.) strawberry jello
1/2 cup boiling water

5 to 6 oz. of cream cheese
2 cups of cool whip ( I am going to try home made whipped cream next time)
1 tsp. organic extract

Some fresh whole strawberries.

Combine the pudding mix, water and lemon juice in a pan. Bring to a boil while stirring. Let it boil for 1 to 2 minutes. It will thicken up. Set aside.

Dissolve the jello in the boiling water. Then stir in the pudding mixture. Put it in the fridge for about 1/2 hour to let it thicken more.

Then put the sliced strawberries into the mixture and fold them in. Pour this into your pre-baked pie crust.

Beat the cool whip, vanilla and cream cheese until smooth. You might like more or less of either. Do this to taste.

I put the above mixture into a pastry bag and decorated the top of the pie. Then add some whole strawberries on top. Let the pie chill in the fridge for 1 hour. Then eat!! YUM!!!!


The other recipe is one I made for later in the day. This is really good. I took a picture of it, but it was not a good picture, so make some yourself and see how pretty it is. This is like a dip and can be served cold or warm. We prefer cold.

Poor Man's Caviar

Cook one cup of black beans and drain them.
Cook one cup of shoe peg corn. (I have a hard time finding this, so I just used sweet corn)
1 can of diced tomatoes with green chilis
2 bell peppers chopped up (use colorful ones)
2 avocados, diced
1/2 of a red onion, chopped
2 to 3 Tbsp. of lime juice
1/4 tsp. salt
1 to 2 Tbsp. of cilantro
1 small bottle of zesty Italian dressing

Mix this all together and then if you want it cold, let it chill in the fridge. Then get out the tortilla chips and dig in.

You can use a can of black beans that you drain as well as a can of corn that is drained. I have also made up a bottle of my homemade Italian dressing and used that. I was out of lime juice, so I substituted lemon juice. It was good, but the lime juice really adds a great flavor touch.
