Homemade Crackers Again.


I made crackers again today. I did it much different than the other ones. They turned out really good!!!

Crackers
4 to 4 1/2 cups flour (I used 3 cups of soft wheat and the rest hard wheat)
1 tsp. baking powder
3/4 cup shortening or butter
1 cup milk
1/2 to 1 tsp. salt

Preheat oven to 375

I combined the baking powder with 4 cups of flour. I mixed in the butter, milk and salt. I had to add the other 1/2 cup of flour to make a dough I could work with. I made a big ball and then divided it into 4 pieces. I wanted to try different times in the oven, etc. Take one dough section and roll it our VERY thin. I did mine on a stone. Then cut into the shapes you want and prick several times with a fork. Sprinkle the tops with salt. The first piece I did at 10 mins. It was OK, but they were just a tad bit soft. When I tried to put some of my cheese spread on one, it broke. The next batch I put in for about 14 mins. That was pretty good, but the outside edges got a bit too done. I put the next batch in for about 12 mins. and they are great. The last batch is in now.

    Sorry to ask such a simple question (but I really am still learning) - what's the soft wheat compared to hard wheat. I know there's red and white wheat berries but I don't have it all figured out yet (which is best for what). Are there other grains that qualify as hard or soft (like rye or spelt, etc.) Thanks ahead of time!
